Meatballs

My wife said I “outdid myself with this one”


1 lb. ground port
2 lb. ground beef
1 cup diced onions
1 cup diced celery
~5 strips pre-cooked bacon (diced)
3/4 cups italian seasoned breadcrumbs(Vigo brand)
2 eggs
1 tsp salt
1/2 tsp pepper
2 tbls chopped fresh parsley
2x 45oz jars spagetti sauce


  1. Saute bacon, onions and celery until translucent
  2. Combine all ingrediants (except spagetti sauce) until well mixed
  3. Portion into 3" balls (using ice cream disher)
  4. Brown meatballs in a little bit of oil until brown on all sides
  5. Add both jars of sauce to a large pot and bring up to a boil
  6. Add meatballs to the pot turn heat to low and simmer for about 45-60 mins

Serve on hogie roll by cutting one meatball in half and add mozzarella cheese and sauce
