Lentil soup

I grew up with this soup…As a kid I don’t remember liking it too much, but now I can’t get enough of it.

1 cup diced onions
1 cup diced carrots
1 cup diced celery
2 tbsp. oil
16 oz. lentils
1 meaty ham bone
2 bay leaves
2 tsp. oregano
2 tsp. basil
salt/pepper to taste
6-8 cups water


  1. In a large pot saute onions, celery, and carrots in the oil
  2. Add bay leaves, oregano, basil, and salt/pepper
  3. Add lentils and mix until the oil coats the beans an the vegetables are mixed in
  4. Put the ham bone in the middle of the pot
  5. Add 6-8 cups of water
  6. bring to a boil and simmer for 60 minutes
  7. Remove ham bone and remove as much meat as possible
  8. Add the meat back to the soup.
  9. Continue cooking until lentils are to teh desired tenderness.

One addition you can make is a few dashes of Maggi seasoning…its kind of like a type of soy sauce, but adds an
entirely different flavor.
