I grew up with this soup…As a kid I don’t remember liking it too much, but now I can’t get enough of it.
1 cup diced onions
1 cup diced carrots
1 cup diced celery
2 tbsp. oil
16 oz. lentils
1 meaty ham bone
2 bay leaves
2 tsp. oregano
2 tsp. basil
salt/pepper to taste
6-8 cups water
- In a large pot saute onions, celery, and carrots in the oil
- Add bay leaves, oregano, basil, and salt/pepper
- Add lentils and mix until the oil coats the beans an the vegetables are mixed in
- Put the ham bone in the middle of the pot
- Add 6-8 cups of water
- bring to a boil and simmer for 60 minutes
- Remove ham bone and remove as much meat as possible
- Add the meat back to the soup.
- Continue cooking until lentils are to teh desired tenderness.
One addition you can make is a few dashes of Maggi seasoning…its kind of like a type of soy sauce, but adds an
entirely different flavor.
