Steak Chili

Mike’s “Award Winning” Chili

~3 lbs Fajita steak diced ~3/8”
1 medium onion
1 celery rib
2 cans Black beans drained and rinsed
1 28 oz can crushed tomatoes
1 28 oz can tomato sauce
½ jar Roasted Red Pepper coarsely chopped
~ ½ can of beef stock
~1 tsp McCormick Montreal Steak seasoning
~2 tsp chili powder
~1 tsp ground cumin
salt/pepper to taste


Making the Chili

  1. Brown Onion, Celery in a bit of EVOO and add about ½ the chili powder and cumin.
  2. Remove the mixture from the pan.
  3. Brown the meat in batches, removing each batch until done.
  4. Add the Onion mix as well as all the meat back to a crock pot.
  5. Add the Steak Seasoning mix.
  6. Add the Black Beans, Tomatoes, Roasted Red Peppers, and Tomato sauce to the pan.
  7. Add remaining Chili Powder and cumin.
  8. Add beef stock to get desired consistency.
  9. Simmer for 6-8 hours on medium.
  10. Enjoy.
