Mike’s “Award Winning” Chili

~3 lbs Fajita steak diced ~3/8”
1 medium onion
1 celery rib
2 cans Black beans drained and rinsed
1 28 oz can crushed tomatoes
1 28 oz can tomato sauce
½ jar Roasted Red Pepper coarsely chopped
~ ½ can of beef stock
~1 tsp McCormick Montreal Steak seasoning
~2 tsp chili powder
~1 tsp ground cumin
salt/pepper to taste
Making the Chili
- Brown Onion, Celery in a bit of EVOO and add about ½ the chili powder and cumin.
- Remove the mixture from the pan.
- Brown the meat in batches, removing each batch until done.
- Add the Onion mix as well as all the meat back to a crock pot.
- Add the Steak Seasoning mix.
- Add the Black Beans, Tomatoes, Roasted Red Peppers, and Tomato sauce to the pan.
- Add remaining Chili Powder and cumin.
- Add beef stock to get desired consistency.
- Simmer for 6-8 hours on medium.
- Enjoy.
